Prepare the Batter
In a large bowl, mix the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and has no lumps.

Batter the Cod
Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated.

Fry the Cod
In a large pot or deep fryer, heat the oil to 350°F (175°C). Fry the battered cod fillets in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into even-sized fries, about 1/4 inch thick.

Heat the oil in a separate pot or fryer to 350°F (175°C). Fry the potato fries in batches for about 5-6 minutes until they are golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.
