Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.

Add Garlic and Meat

Stir in the minced garlic and cook for another minute. Add the ground beef or shredded chicken, cooking until browned and fully cooked, about 7-10 minutes.

Season the Filling

Sprinkle in the cumin, chili powder, and salt. Stir to combine and let cook for an additional 2 minutes.

Add Beans and Corn

Fold in the black beans and corn kernels. Cook for another 3-5 minutes until heated through. Remove from heat and set aside.

Mix in Cheese

Add 1 cup of shredded cheese to the filling mixture, stirring until melted and combined.

Combine Ingredients

In a saucepan over medium heat, combine the tomato sauce, broth, cumin, chili powder, garlic powder, onion powder, salt, and sugar.

Simmer Sauce

Bring the mixture to a simmer, reduce the heat to low, and let it cook for about 10 minutes, stirring occasionally.

Assembling Enchiladas

Preheat Oven

Preheat your oven to 375°F (190°C).

Fill Tortillas

On a flat surface, take a corn tortilla and spoon about 1/4 cup of the filling into the center. Roll the tortilla tightly around the filling and place seam-side down in a baking dish.

Continue filling and rolling the remaining tortillas until all the filling is used.

Pour the enchilada sauce evenly over the rolled tortillas in the baking dish, ensuring they are well coated.

Sprinkle the remaining shredded cheese on top of the sauce.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Remove from the oven, garnish with chopped cilantro, and serve with sour cream on the side.
