Brownie Bites

Prepare the Pan
Preheat your oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper.

Mix Ingredients
In a large bowl, melt the unsalted butter. Add both sugars and mix until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients
In another bowl, whisk together the flour, cocoa powder, and salt. Gradually add this dry mix to the wet mixture, stirring until just combined. Fold in the chocolate chips.

Bake
Pour the brownie batter into the prepared pan and spread evenly. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.

Cool and Cut
Allow the brownies to cool completely in the pan before lifting them out with the parchment paper. Cut into small bites.

Prepare the Pan
Preheat the oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper.

Prepare the Crust
In a mixing bowl, cream together the unsalted butter and granulated sugar. Gradually add the flour until combined. Press the mixture into the bottom of the prepared pan.

Bake the Crust
Bake the crust for 15 minutes until lightly golden.

Make the Filling
In another bowl, whisk together the eggs, fresh lemon juice, baking powder, and powdered sugar until smooth. Pour this mixture over the baked crust.

Bake Again
Return the pan to the oven and bake for an additional 20 minutes or until the filling is set. Allow to cool completely.

Cut and Serve
Once cooled, dust with powdered sugar and cut into small bars.
Rice Crispy Treats

Melt Butter and Marshmallows
In a large saucepan, melt the unsalted butter over low heat. Once melted, add the mini marshmallows and stir until completely melted and smooth.

Combine with Cereal
Remove from heat and stir in the vanilla extract. Add the rice cereal and mix until well-coated with the marshmallow mixture.

Shape Treats
Transfer the mixture into a greased 9x13 inch baking dish. Press down firmly to create an even layer.

Cool and Cut
Allow to cool at room temperature before cutting into small squares.
