Preparing the Marinara Sauce

    Heat the Olive Oil

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

    Add Garlic

    Minced 3 cloves of garlic and add them to the saucepan. Sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Pour in the 15 oz can of crushed tomatoes. Stir in 1 teaspoon of dried oregano, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of sugar.

    Simmer the Sauce

    Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook for about 15 minutes, stirring occasionally.

    Finish with Basil

    Stir in 1 tablespoon of fresh chopped basil and remove from heat. Set aside while you prepare the calamari.

    Prepare the Calamari

    Rinse 1 pound of calamari rings under cold water and pat dry with paper towels.

    Make the Coating Mixture

    In a large bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of garlic powder. Mix well.

    Dredge the Calamari

    Dip each calamari ring into 1 cup of buttermilk, letting excess drip off, then dredge them in the flour mixture, making sure they are well-coated.

    Heat the Oil

    In a deep skillet or fryer, heat 2 cups of vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

    Drain the Calamari

    Once cooked, use a slotted spoon to transfer the calamari to a paper towel-lined plate to drain excess oil.

    Serve the crispy calamari hot with the marinara sauce on the side for dipping.
