Base Preparation

Prepare the crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

Press the crust
Press the crumb mixture firmly into the bottom of a greased mini muffin tin or silicone mold. Use the back of a spoon to ensure it's compact.

Mix the filling
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar and continue mixing until well combined.

Add sour cream and vanilla
Add sour cream and vanilla extract to the cream cheese mixture. Mix until smooth.

Incorporate eggs
Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Add flavors
Divide the cheesecake filling into separate bowls, one for each flavor. Stir in lemon zest, chocolate chips, strawberry puree, and peanut butter into their respective bowls.
Baking

Fill the crust
Spoon the flavored cheesecake filling into each crust, filling them about 3/4 full.

Preheat the oven to 325°F (160°C). Bake for 15-20 minutes or until the filling is set and slightly jiggly in the center.

Remove from the oven and let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, top each cheesecake bite with whipped cream, fresh fruit, and drizzle with chocolate sauce as desired. Serve chilled and enjoy!
