For the Calamari

Method

For the Calamari

  1. 1

    Prepare the Squid

Ensure the squid is cleaned and cut into rings, around 1/2 inch thick. Pat the squid rings dry with paper towels to remove excess moisture.

  2. 2

    Make the Breading Station

In three separate bowls, place the all-purpose flour in the first bowl, the beaten eggs in the second bowl, and combine the cornstarch, salt, black pepper, garlic powder, and paprika in the third bowl. Mix well.

  3. 3

    Coat the Squid

Take each squid ring, coat it in the flour, dip it in the beaten eggs, then coat it in the cornstarch mixture. Finally, roll it in the breadcrumbs until fully coated.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the oil to 375°F (190°C). Use a thermometer for accuracy.

  5. 5

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

  6. 6

    Serve

Serve the crispy fried calamari hot with marinara sauce for dipping.

For the Marinara Sauce

  1. 7

    Heat the Olive Oil

In a saucepan over medium heat, add the olive oil and let it heat up.

  2. 8

    Sauté the Garlic

Add the minced garlic to the oil and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  3. 9

    Add the Tomatoes and Spices

Pour in the crushed tomatoes, then add the dried oregano, salt, black pepper, and red pepper flakes. Stir to combine.

  4. 10

    Simmer the Sauce

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.

  5. 11

    Garnish and Serve

Just before serving, stir in the chopped fresh basil. Serve warm with the fried calamari.
