Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface. Knead for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Prepare Fillings

    While the dough is rising, prepare your fillings. Chop any vegetables and cook any meats if necessary. Keep them ready for assembly.

Calzone Assembly

    Preheat Oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

    Divide Dough

    Once the dough has risen, punch it down and divide into 4 equal pieces.

    Roll Out Dough

    On a floured surface, roll each piece of dough into a circle about 10 inches in diameter.

    Add Fillings

    On one half of each dough circle, sprinkle a generous layer of mozzarella cheese followed by your choice of up to 3 toppings. Sprinkle with Italian seasoning and crushed red pepper flakes.

    Fold and Seal

    Fold the other half of the dough over the fillings to create a half-moon shape. Press the edges together, then crimp with a fork to seal.

    Bake Calzones

    Transfer assembled calzones to a baking sheet or a pizza stone. Bake in the preheated oven for about 15-20 minutes or until golden brown.
