Preparation of Chicken Wings

Prepare Chicken
Cut the boneless chicken breast into bite-sized pieces (about 1-2 inches).

Make the Batter
In a large bowl, mix the flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika.

Combine Mixtures
Add the wet mixture to the dry ingredients and stir until a batter forms.
Cooking Chicken Wings

Heat Oil
In a deep skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Dip each piece of chicken into the batter, allowing excess to drip off.

Carefully place coated chicken pieces into the hot oil and fry for 5-7 minutes, or until golden brown and cooked through.

In another bowl, combine mayonnaise, sour cream, bleu cheese, buttermilk, garlic powder, salt, and black pepper. Mix until smooth, leaving some chunks of bleu cheese for texture.
