Prepare the Chicken
Cut the boneless chicken breasts into bite-sized pieces. Season with salt, black pepper, garlic powder, and onion powder.

Set Up Breading Station
In one bowl, place the buttermilk and eggs, whisk to combine. In another bowl, mix the all-purpose flour and cornstarch together.

Bread the Chicken
Dip each chicken piece first into the buttermilk mixture, then coat it thoroughly in the flour and cornstarch mixture. Set aside on a plate.
Frying the Chicken Wings

Heat Oil
In a large skillet, heat enough oil to cover the bottom of the pan over medium-high heat.

Fry the Chicken
Once the oil is hot, carefully add the breaded chicken pieces in batches, cooking until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on a paper towel-lined plate.
Coating and Serving

In a large bowl, toss the fried chicken pieces with the buffalo sauce until evenly coated.

In a medium bowl, combine mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, salt, and black pepper. Stir until well combined.

Cover the blue cheese dressing and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
