Preparation

Prepare the Rice

Rinse the rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.

Cook the Rice

Drain the soaked rice and steam it in a bamboo steamer or a rice cooker until fully cooked, about 30 minutes.

Mix Ingredients

Once the rice has cooled to room temperature, mix it with nuruk and yeast in a large fermentation jar.

Add Water and Sugar

Dissolve the sugar in 6 cups of water, and pour it over the rice mixture in the fermentation jar.

Fermentation

Cover the jar with a cloth and secure it with a rubber band. Let it ferment at room temperature for about 1-2 weeks, stirring daily.

Strain and Bottle

After fermentation, strain the liquid through a fine mesh sieve or cheesecloth into a clean bottle, discarding solids. Seal the bottle and refrigerate.
