    Prepare the Steak

    Remove the dry-aged ribeye steak from the refrigerator and let it come to room temperature for about 30-60 minutes. This helps in even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper. Let it sit for 10 minutes to absorb the seasoning.

    Prepare the Grill

    Prepare a wood-fired grill. Use hardwood such as oak or hickory for a rich flavor. Allow the fire to burn down until you have hot coals.

    Sear the Steak

    Drizzle olive oil on the steak and place it on the grill. Sear for about 4-5 minutes on each side for medium-rare, or adjust according to your preferred doneness.

    During the last minute of cooking, add fresh rosemary and smashed garlic cloves to the grill to infuse flavor into the steak.
