Sauté the Aromatics

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 5 minutes.

Cook the Rice

Add the long-grain rice to the skillet and stir it with the onions for 2-3 minutes. This step helps to toast the rice slightly.

Mix the Filling Ingredients

In a large bowl, combine the cooked rice mixture, ground lamb or beef, parsley, dill, toasted pine nuts, salt, black pepper, and cinnamon. Mix well until all ingredients are fully incorporated.

Prepare the Grape Leaves

Rinse the canned grape leaves under cold water to remove excess brine. Lay them flat on a clean surface, shiny side down.

Stuff the Leaves

Take about 1 tablespoon of the filling mixture and place it near the stem end of each grape leaf. Fold the sides over the filling, then roll it up tightly from the stem end to the tip. Repeat until all filling is used.
