Rinse the Lentils

Place the lentils in a fine mesh strainer and rinse them under cold running water. This helps to clean them and remove any debris.

Chop the Vegetables

Chop the onion, carrots, celery, and tomato into small, even pieces to ensure they cook evenly. Mince the garlic cloves.

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent.

Add Garlic and Tomato

Stir in the minced garlic and diced tomato. Cook for an additional 2-3 minutes until fragrant.

Combine Lentils and Broth

Add the rinsed lentils and vegetable broth to the pot. Stir to combine.

Season the Soup

Add the bay leaves, thyme, cumin, salt, and black pepper to the pot. Stir well to mix all the ingredients.

Simmer the Soup

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-35 minutes, or until the lentils are tender.
