Prepare the Chiles
Remove the stems and seeds from the dried guajillo and ancho chiles. Place the chiles in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes until softened. Drain and set aside.

Make the Marinade
In a blender, combine the softened chiles, pineapple juice, white vinegar, garlic cloves, cumin, oregano, paprika, salt, black pepper, and sugar. Blend until smooth to create a marinade.

Marinate the Pork
Cut the pork shoulder into small chunks and place it in a large bowl. Pour the marinade over the pork, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Rest the Pork
Once cooked, remove the pork from the heat and let it rest for 5 minutes. Then chop it into small pieces for taco assembly.

Garnish the Tacos
Top each taco with chopped white onion and fresh cilantro. Serve with lime wedges on the side for squeezing over the tacos.
