Method

Preparation of Octopus

  1. 1

    Clean the Octopus

If the octopus isn’t pre-cleaned, rinse it under cold water, removing any beak and innards.

  2. 2

    Boil the Octopus

In a large pot, bring water to a boil. Add the octopus and cook for about 40-50 minutes until tender. Check for doneness by piercing with a fork. Drain and let it cool slightly.

Cooking

  1. 3

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.

  2. 4

    Seasoning

Stir in the oregano, smoked paprika, salt, and black pepper. Cook for an additional minute until the spices are fragrant.

  3. 5

    Add Octopus

Chop the boiled octopus into bite-sized pieces and add to the skillet. Toss gently to coat the octopus in the spice mixture. Cook for about 5-7 minutes until heated through.

  4. 6

    Final Touch

Squeeze the juice of one lemon over the octopus and give it a final toss. Adjust seasoning if necessary.

Garnishing

  1. 7

    Serve

Transfer the Spanish octopus to a serving platter. Garnish with chopped fresh parsley and chili flakes if desired.
