    Wash, peel, and chop the carrots, potatoes, parsnips, celery, and onion into small, uniform pieces. Mince the garlic cloves and set aside.

    Rinse the kale or spinach thoroughly, remove the stems (if using kale), and chop into bite-sized pieces.
