Puff Pastry Preparation

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Puff Pastry

    Roll out the puff pastry sheets on a lightly floured surface to smooth out any creases.

    Cut and Score

    Cut each puff pastry sheet into rectangles (about 3x5 inches). Place them on a baking sheet lined with parchment paper. Using a sharp knife, lightly score a border about 1/2 inch from the edges of each rectangle, being careful not to cut all the way through.

    Brush and Sugar

    Brush the beaten egg over the tops of the pastry rectangles and sprinkle with granulated sugar.

    Bake

    Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed. Remove from oven and let cool.

Raspberry Filling Preparation

    In a medium saucepan over medium heat, combine fresh raspberries, granulated sugar, and lemon juice. Cook until the raspberries start to break down, about 5 minutes.

    In a small bowl, mix cornstarch with 2 tablespoons of water until smooth. Pour this mixture into the raspberry mixture, stirring constantly until it thickens, about 2-3 minutes. Remove from heat and let cool.

Rose Cream Preparation

    In a large mixing bowl, combine heavy cream and powdered sugar. Using an electric mixer, whip until soft peaks form.

    Gently fold in the rose water until fully incorporated.

Assembling Napoleons

    Take one piece of the baked puff pastry and spread a layer of raspberry filling on top. Add a dollop of rose cream and then place another puff pastry piece on top.

    Repeat with another layer of raspberry filling and rose cream, then top with a final piece of puff pastry.
