Prepare Vegetables

    Chop the Vegetables

    Dice the poblano pepper, onion, and tomato into small pieces. Mince the garlic cloves.

Cook the Vegetables

    Sauté the Vegetables

    In a medium skillet over medium heat, add a splash of oil. Once hot, add the diced poblano pepper and onion. Sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant. Stir in the diced tomato and cook for an additional 2-3 minutes, until the tomato begins to soften. Season with cumin, salt, and black pepper to taste.

Melt the Cheese

    Combine the Cheese

    In a mixing bowl, combine Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix well until all cheeses are evenly distributed.

    Melt the Cheese Mixture

    Transfer the cheese mixture to the skillet with the sautéed vegetables. Reduce the heat to low and stir gently until the cheeses melt and everything is well combined. This should take about 5-7 minutes.

    While the cheese is melting, warm the tortillas in a dry skillet or microwave until pliable.
