    Roast the Poblano Peppers

    Preheat your oven to 425°F (220°C). Place the poblano peppers on a baking sheet and roast for about 20 minutes, turning halfway through, until the skin is charred and blistered. Remove from the oven, place in a bowl, and cover with plastic wrap to steam for 10 minutes. Once cooled, peel off the skin, remove the seeds, and chop them into small pieces.

    Prepare the Vegetables

    While the peppers are roasting, peel and dice the sweet potatoes, onion, carrot, and celery. Mince the garlic cloves.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and sauté for an additional minute until fragrant.

    Stir in the diced sweet potatoes, roasted poblano peppers, cumin, smoked paprika, salt, and black pepper. Pour in the vegetable broth and bring the mixture to a boil.
