Preparation of Mussels

    Clean the Mussels

    Rinse the mussels under cold running water. Use a brush to scrub the shells and remove any debris. Discard any mussels that are open and do not close when tapped.

    Finely chop the garlic and shallots and set aside.

Cooking Mussels

    In a large pot, heat the olive oil over medium heat. Add the chopped garlic and shallots, and sauté for about 2-3 minutes until fragrant and translucent.

    Add the cleaned mussels to the pot. Pour in the white wine, cover the pot, and cook for about 5-7 minutes, or until the mussels open up. Discard any mussels that remain closed.

Making the Sauce
