Marinated Rainbow Beets Ingredients

Method

Marinated Rainbow Beets Directions

  1. 1

    Prepare the Beets

Preheat your oven to 400°F (200°C). Wash the rainbow beets thoroughly to remove any dirt. Trim the tops and tails, then wrap them individually in aluminum foil.

  2. 2

    Roast the Beets

Place the wrapped beets on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and let them cool slightly.

  3. 3

    Peel the Beets

Once the beets are cool enough to handle, unwrap them from the foil and peel off the skins using your fingers or a paper towel. Cut the beets into bite-sized pieces and place them in a large mixing bowl.

  4. 4

    Make the Marinade

In a separate bowl, whisk together the olive oil, red wine vinegar, honey, minced garlic, fresh thyme, salt, and black pepper until well combined.

  5. 5

    Marinate the Beets

Pour the marinade over the chopped beets in the mixing bowl. Gently toss to ensure that all the beet pieces are evenly coated with the marinade.

  6. 6

    Chill

Cover the bowl with plastic wrap and place it in the refrigerator for at least 1 hour to allow the flavors to meld. For best results, marinate overnight.

  7. 7

    Serve

Before serving, give the beets a good toss and sprinkle with crumbled feta cheese (if using) and chopped fresh parsley as a garnish. Enjoy your marinated rainbow beets as a refreshing side dish or salad!
