    In a large mixing bowl, whisk together the all-purpose flour, ground almonds, and salt until well combined.

    In another bowl, beat the softened unsalted butter with granulated sugar and powdered sugar until the mixture is light and fluffy.

    Add the egg yolk and vanilla extract to the butter mixture and mix until fully incorporated.

    Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Do not overmix.

    Wrap the dough in plastic wrap and refrigerate for at least 1 hour to make it easier to roll.
