    If using dried leather britches, soak them in water for at least 4 hours or overnight to rehydrate. If using fresh, rinse them and set aside.

    Dice the onion, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic cloves. If using dried shiitake mushrooms, rehydrate them in warm water for about 20 minutes, then slice.
