Preparing the Fries

Cut and Soak Potatoes

Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Heat Oil

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Potatoes

Drain the fries and pat them dry with paper towels. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while they are still hot.

In a medium bowl, combine mayo, sour cream, chipotle peppers, lime juice, garlic powder, cumin, and salt. Mix well until smooth.

Fold in the chopped cilantro into the sauce. Adjust seasoning with additional salt, if necessary.

On a serving platter, arrange the hot fries in a single layer.
