Preparing the Rice Mixture

    Rinse the Rice

    In a fine-mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This removes excess starch.

    Soak the Rice

    Place the rinsed rice in a large bowl and add 4 cups of water. Add the cinnamon sticks and let the mixture soak for at least 3 hours, or preferably overnight.

Blending and Straining

    Blend the Mixture

    After soaking, discard the cinnamon sticks. Transfer the rice and water mixture to a blender. Blend on high speed until the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Using a fine-mesh strainer or cheesecloth, strain the blended mixture into a large pitcher or bowl. Press the mixture to extract as much liquid as possible. Discard the remaining solids.

Finishing Touches

    Sweeten the Horchata

    To the strained liquid, add the sugar, vanilla extract, milk (or almond milk), ground cinnamon, and a pinch of salt. Stir well until the sugar is completely dissolved.

    Chill and Serve

    Refrigerate the horchata for at least 2 hours to chill. Serve over ice and optionally sprinkle with additional ground cinnamon.
