Method

Preparation

  1. 1

    Prepare the Ingredients

Rinse the Sweet Gem Lettuce under cold water and pat dry. Cut each head in half lengthwise, keeping the core intact. Remove the seeds from the jalapeño and finely chop it. If using frozen corn, thaw it in advance.

Grilling

  1. 2

    Grill the Lettuce and Corn

Preheat the grill to medium-high heat. Brush the cut sides of the Sweet Gem Lettuce with a little olive oil. Place the lettuce halves and corn on the grill. Grill the lettuce cut-side down for about 2-3 minutes until lightly charred and warm. Grill the corn, turning occasionally, for about 5-7 minutes until slightly charred. Remove from the grill and let cool slightly.

Cooking Bacon

  1. 3

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 4-5 minutes per side. Once cooked, transfer to a paper towel-lined plate to drain excess grease. Once cooled, chop the bacon into bite-sized pieces.

Making Dressing

  1. 4

    Prepare the Dressing

In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until smooth and well combined.

Assembling Salad

  1. 5

    Assemble the Salad

On a serving platter, arrange the grilled Sweet Gem Lettuce halves. Scatter the grilled corn and chopped jalapeño over the lettuce. Add the crispy bacon pieces on top. Drizzle the prepared dressing evenly over the salad before serving.
