    Prepare the oysters

    Preheat the grill to medium-high heat. Carefully shuck the oysters and place them on a tray. Make sure to keep the oyster liquor inside the shells.

    Cook the seafood mixture

    In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Add minced garlic and jalapeños, cooking for another 2 minutes. Then, add diced octopus, shrimp, and crab meat. Season with salt and black pepper. Cook until shrimp are pink and opaque, about 5-6 minutes.

    Combine with cheese

    Remove the skillet from heat and stir in shredded cheese until melted and well combined. Squeeze in lemon juice and mix thoroughly.

Assembly and Grilling

    Stuff the oysters

    Using a spoon, carefully fill each shucked oyster shell with the seafood mixture, mounding it slightly on top.

    Grill the oysters

    Place the stuffed oysters on the grill. Close the grill lid and cook for about 5-7 minutes, or until the cheese is bubbly and the edges of the oysters are slightly charred.

    Remove the oysters from the grill and let them cool for a minute. Serve warm, garnished with additional lemon if desired.
