Preparation

    Prepare the Marinade

    In a bowl, combine guajillo chili powder, ancho chili powder, and sea salt. Add minced garlic cloves and lime juice. Mix well until all spices are combined to create a marinade.

    Marinate the Shrimp

    Add the peeled and deveined shrimp to the marinade. Stir to ensure all shrimp are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Grilling

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a grill basket, lightly oil it to prevent sticking.

    Grill the Shrimp

    Once the grill is hot, place the marinated shrimp onto the grill or in the grill basket. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

    Add Vegetables

    During the last few minutes of grilling, add the sliced onion and julienned carrot to the grill alongside the shrimp. Grill until they are slightly charred and tender.

Serving

    Garnish and Serve

    Once cooked, remove the shrimp and vegetables from the grill. Transfer to a serving platter, sprinkle with chopped cilantro, and serve with lime wedges on the side.
