Method

Prepare the Lobster

    Clean the Lobster

    Rinse the live lobsters under cold water to remove any debris. Using a sharp knife, carefully insert it into the head of the lobster to kill it quickly.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Prepare the Lobster for Grilling

    Cut the lobsters in half lengthwise. Brush the flesh with olive oil, and season with salt and black pepper.

Make the Elote

    Grill the Corn

    Place the corn on the grill and cook for about 10-12 minutes, turning occasionally, until charred and tender.

    Prepare the Sauce

    In a bowl, mix mayonnaise, cotija cheese, and chili powder together.

    Serve the Elote

    Spread the sauce over the grilled corn and squeeze fresh lime juice on top before serving.

Make the Mexican Slaw

    Shred the Vegetables

    Shred the cabbage and carrot. Finely chop the red onion and cilantro.

    Mix the Slaw

    In a large bowl, combine the shredded cabbage, carrot, onion, cilantro, lime juice, olive oil, and salt. Toss well to mix.

Prepare Garlic Butter

    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter.

    Add Garlic

    Finely chop the garlic cloves and add them to the melted butter. Cook for 1-2 minutes until fragrant.

    Finish the Butter

    Remove from heat and stir in chopped parsley and lemon juice. Set aside.

Grill the Lobster

    Grill the Lobster Halves

    Place the lobster halves on the grill, shell side down. Grill for about 5-7 minutes, until the meat is opaque and cooked through.

    Baste with Garlic Butter

    During the last few minutes of grilling, brush the lobster meat with the prepared garlic butter.

Serve

    Plating the Dish

    Remove the grilled lobster from the grill and serve it alongside the elote and Mexican slaw. Drizzle any remaining garlic butter over the lobster before serving.
