Preparation of Oysters

    Clean the Oysters

    Rinse the fresh oysters under cold water to remove any debris or sand. Use a brush if necessary to clean the shells thoroughly.

    Shuck the Oysters

    Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge and twisting to open. Place the shucked oysters on a tray with the deeper shell facing up.

Chili Butter Preparation

    Prepare the Chili Butter

    In a small saucepan, melt the unsalted butter over medium heat. Add the chopped fresh chili peppers and minced garlic cloves to the melted butter.

    Infuse the Butter

    Allow the butter to simmer gently for about 5-7 minutes, stirring occasionally, until the garlic is fragrant and the chili flavor infuses the butter. Do not let the garlic burn.

    Season the Butter

    Remove the saucepan from heat and stir in the fresh lemon juice, salt, and black pepper. Mix well to combine.

Grilling Oysters

    Preheat the Grill

    Preheat your grill to medium-high heat (around 400°F or 200°C).

    Grill the Oysters

    Using a spoon, drizzle a generous amount of the chili butter over each shucked oyster. Place the oysters directly on the grill grate or on a grill-safe tray.

    Cook the Oysters

    Grill the oysters for about 5-7 minutes, or until the edges of the oysters start to curl and the butter is bubbling.

    Garnish and Serve

    Remove the grilled oysters from the grill and sprinkle with freshly chopped parsley before serving. Serve hot, with extra chili butter on the side if desired.
