Method

Preparation

  1. 1

    Prepare the Ingredients

Wash and peel the pears, then chop them into small pieces. Set aside. Chop the onion and mince the garlic.

  2. 2

    Grate the Ginger

Using a grater or microplane, grate the fresh ginger until you have 2 tablespoons. Set aside.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for an additional 2 minutes.

  2. 4

    Add the Pears and Broth

Add the chopped pears to the pot and stir to combine. Pour in the vegetable broth, and add salt and black pepper. Bring the mixture to a boil.

  3. 5

    Simmer the Soup

Once boiling, lower the heat and let the soup simmer for 20 minutes, or until the pears are tender.

  4. 6

    Blend the Soup

Using an immersion blender or transferring to a countertop blender in batches, blend the soup until smooth. If using a countertop blender, be sure to allow steam to escape.

Serving

  1. 7

    Garnish and Serve

Ladle the soup into bowls and, if desired, garnish with chopped fresh parsley and a dollop of yogurt or sour cream. Serve warm.
