Preparation of Oysters

Clean the Oysters
Rinse the fresh oysters under cold water to remove any sand or debris. Use a brush if necessary. Set aside.

Shuck the Oysters
Using an oyster knife, carefully shuck each oyster. Discard the top shell and keep the oyster in the bottom shell. Place the shucked oysters on a serving platter.
Making the Chili Sauce

Chop the Vegetables
Finely chop the red onion and mince the garlic cloves.

Add Spices
Stir in the guajillo and ancho chili powders, lime juice, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are fragrant and the mixture is well combined.
Serving

Top the Oysters
Spoon the chili sauce evenly over each shucked oyster on the half shell.

Garnish and Serve
Optionally, garnish with fresh lime wedges or cilantro. Serve immediately while fresh.
