Method

Caramel Preparation

  1. 1

    Prepare the Caramel

In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar is dissolved.

  2. 2

    Cook the Caramel

Increase the heat to medium-high and allow the mixture to boil without stirring. Swirl the pan occasionally until the mixture turns a deep amber color, about 8-10 minutes.

  3. 3

    Cool the Caramel

Immediately pour the caramel into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Blend the Custard Ingredients

In a blender, combine the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt. Blend until smooth and well combined.

  2. 5

Pour the Custard into the Mold

Pour the custard mixture over the set caramel in the mold or ramekins.

  3. 6

    Prepare for Baking

Preheat your oven to 350°F (175°C). Place the flan mold or ramekins in a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the mold.

  4. 7

    Bake the Flan

Bake in the preheated oven for about 50-60 minutes, or until a knife inserted in the center comes out clean.

  5. 8

    Cool and Serve

Remove the flan from the oven and let it cool in the water bath for about 30 minutes. Then, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges and invert onto a serving plate, allowing the caramel to drizzle over the flan.
