    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil in salted water until fork-tender, about 15 minutes. Drain and set aside.

    Sauté the Onion and Garlic

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Add Spinach and Spices

    Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in curry powder, cumin, salt, and black pepper.

    Fold in the cooked potatoes and shredded cheddar cheese, mixing well. Remove from heat and allow to cool slightly.

Prepare the Pastry

    In a mixing bowl, combine flour and salt. Add cold, cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
