Sauté the Onion and Garlic
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

Add Spinach and Spices
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in curry powder, cumin, salt, and black pepper.

Combine with Potatoes and Cheese
Fold in the cooked potatoes and shredded cheddar cheese, mixing well. Remove from heat and allow to cool slightly.
Prepare the Pastry

Make the Dough
In a mixing bowl, combine flour and salt. Add cold, cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Gradually add cold water, mixing until the dough comes together. Do not overwork the dough. Wrap in plastic wrap and refrigerate for 30 minutes.
Assemble and Bake

Roll Out the Dough
Preheat the oven to 400°F (200°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter).

Fill the Pastry
Place a spoonful of the filling in the center of each circle. Fold the dough over to create a half-moon shape, pressing the edges to seal. Crimp with a fork for a decorative edge.

Place the hand pies on a lined baking sheet. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
