Curing the Salmon

Prepare the Cure
In a bowl, mix together the kosher salt, sugar, chopped dill, crushed black peppercorns, and lemon zest.

Cure the Salmon
Place the salmon fillet skin-side down in a shallow dish. Evenly spread the cure mixture over the salmon, ensuring it is completely covered. Cover the dish with plastic wrap.

Refrigerate the salmon for 24-48 hours, depending on how cured you want it. The longer it cures, the firmer and saltier it will become.

After curing, rinse the salmon under cold water to remove the cure. Pat dry with paper towels and slice thinly.

In a mixing bowl, combine the Greek yogurt, finely diced cucumber, minced garlic, dried mint, salt, and black pepper.
