In a small bowl, combine the ground coffee, smoked paprika, ancho chili powder, brown sugar, garlic powder, cayenne pepper, and cumin. Mix well until all ingredients are evenly combined.

Rinse the branzino under cold water and pat dry with paper towels. Make sure to remove any scales and insides if necessary.
