Dough Preparation

Combine Wet Ingredients
In a medium saucepan, combine 1 cup of water, 2 tablespoons of butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Heat over medium heat until the mixture comes to a boil.

Add Flour
Once boiling, quickly add 1 cup of all-purpose flour to the saucepan. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Cool and Add Eggs
Remove the saucepan from heat and let the dough cool for about 5 minutes. Then, add 2 large eggs one at a time, mixing thoroughly after each addition until the dough is smooth and glossy.

Mix Cinnamon Sugar
In a small bowl, combine 1 cup of granulated sugar with 2 tablespoons of ground cinnamon. Mix well and set aside for coating.

Heat Oil
In a deep frying pan or pot, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe Churros
Transfer the dough to a piping bag fitted with a star-shaped tip. Pipe 4-6 inch strips of dough into the hot oil, cutting them with scissors.

Fry Churros
Fry the churros for about 2-3 minutes on each side or until golden brown and crispy. Do not overcrowd the pan; fry in batches if necessary.
