Clean the Smelts
Rinse the fresh smelts under cold water and pat them dry with paper towels. Ensure that the heads and guts are removed if not already done.

Prepare the Flour Mixture
In a shallow dish, combine the all-purpose flour, salt, and black pepper. Mix well to ensure the seasoning is evenly distributed.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches about 180°C (350°F). You can test if the oil is ready by dropping a small amount of flour into it; if it sizzles, it's ready.

Coat and Fry the Smelts
Dredge each smelt in the flour mixture, ensuring they are evenly coated. Carefully place them in the hot oil, working in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain the Fried Smelts
Once cooked, use a slotted spoon to remove the smelts from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve with Lime and Tajín
Squeeze fresh lime juice over the fried smelts and sprinkle with Tajín seasoning to taste. Serve immediately while hot.
