    Prepare the Ingredients

    Rinse the shrimp, fish, clams, and mussels under cold water. Dice the onion, garlic, tomatoes, and bell pepper. Chop the cilantro and set aside.

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Tomatoes and Peppers

    Stir in the chopped tomatoes and diced bell pepper. Cook for about 5 minutes, allowing the tomatoes to soften and release their juices.

    Add Broth and Seasoning

    Pour in the fish stock (or water), and add salt, black pepper, cayenne pepper, and bay leaves. Bring the mixture to a boil.

    Add Seafood

    Once boiling, reduce the heat to medium-low and add the shrimp, fish fillets, clams, and mussels. Simmer for 10-12 minutes, until the shrimp are pink and the clams and mussels are opened.

    Finish with Cilantro and Lime

    Remove from heat and stir in the chopped cilantro and lime juice. Adjust seasoning with more salt and pepper if needed.

Serving

    Serve Hot

    Ladle the caldo de mariscos into bowls and serve hot. Optionally, garnish with additional cilantro and lime wedges.
