Rice Congee
Toppings
Method
Cooking the Congee
- 1
Prepare the Rice
Rinse the Santee Gold Rice under cold water until the water runs clear.
- 2
Cook the Congee
In a large pot, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer uncovered for about 30-40 minutes, stirring occasionally, until the rice breaks down and reaches a creamy consistency.
Preparing Toppings
- 3
Marinate the Tofu
Press the tofu to remove excess moisture, then cut it into cubes. Marinate in your choice of soy sauce, garlic, and ginger for at least 15 minutes.
- 4
Cook the Vegetables
In a separate pan, sauté the market vegetables in a bit of oil until tender but still vibrant. This should take about 5-7 minutes.
- 5
Prepare Crispy Rice
In a small pan, heat oil over medium heat. Add a layer of rinsed and drained Santee Gold Rice and fry until golden and crispy, about 3-5 minutes. Remove and set aside.
