Method

Cooking the Congee

    Prepare the Rice

    Rinse the Santee Gold Rice under cold water until the water runs clear.

    Cook the Congee

    In a large pot, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer uncovered for about 30-40 minutes, stirring occasionally, until the rice breaks down and reaches a creamy consistency.

Preparing Toppings

    Press the tofu to remove excess moisture, then cut it into cubes. Marinate in your choice of soy sauce, garlic, and ginger for at least 15 minutes.
