Method

Preparing the Petit Fours

    Make the Cake

    Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt. In another bowl, whisk the eggs, milk, and vanilla extract together. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Pour into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.

    Assemble the Layers

    Once the cake has cooled, slice it into small squares. Spread a layer of cherry preserves between two squares and stack them. Repeat until all the cake squares are stacked.

Making the Mirror Glaze

    Prepare the Glaze

    Soak gelatin sheets in cold water for about 5 minutes until soft. In a saucepan, heat the heavy cream until just boiling. Remove from heat and add the chopped white chocolate, stirring until melted and smooth. Squeeze excess water from the gelatin and add it to the chocolate mixture, stirring until fully dissolved.

Finishing Touches

    Glaze the Petit Fours

    Place the stacked petit fours on a wire rack over a baking sheet. Pour the mirror glaze over the top, allowing it to drip down the sides. Let it set for a few minutes.

    Garnish

    Sprinkle the chopped pistachios on top of the glazed petit fours before the glaze sets completely.
