    Prepare the Orange Glaze

    In a small saucepan, combine orange juice and honey. Heat over medium heat until it reduces and thickens slightly, about 5-7 minutes. Set aside.

    Prepare the Miso Broth

    In a pot, combine tan tan broth and miso paste. Stir until the miso is fully dissolved and simmer for 5 minutes. Set aside.

    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add bok choy and sauté until tender, about 3-4 minutes. Add lion's mane mushrooms and cook until browned, about 5 minutes. Season with salt and pepper.

    Crust the Tuna

    Season the yellowfin tuna steaks with salt and pepper. Press both sides of the steaks into sesame seeds to coat evenly.

    Cook the Tuna

    In the same skillet used for the vegetables, add a little more olive oil if needed. Sear the tuna steaks for about 1-2 minutes on each side for medium rare, or until desired doneness.

    On each plate, place a serving of sautéed bok choy and lion's mane mushrooms. Top with a seared tuna steak and drizzle with the orange glaze. Serve with miso broth on the side.
