    Prepare the crust

    Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add in eggs one at a time, mixing well after each addition. Stir in paw paw puree and lime juice until combined.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes or until the center is set and a slight jiggle remains. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

    Prepare the meringue

    While the cheesecake cools, whisk egg whites until soft peaks form. Gradually add sugar and continue whisking until stiff peaks form. Spoon the meringue over the cooled cheesecake.

    Finish with mallow

    Using a kitchen torch, toast the meringue gently until golden brown. Allow the cheesecake to chill in the refrigerator for at least 4 hours or overnight before serving.

    Garnish the cheesecake with fresh curry leaves and serve chilled.
