Cooking Instructions

  1. 1

    Prepare the Steak

Season the HNG NY Strip steaks with salt, black pepper, and ancho chili powder. Let them sit at room temperature for 30 minutes.

  2. 2

    Grill the Steak

Preheat the grill to medium-high heat. Grill the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Let them rest for 5 minutes before slicing.

  3. 3

    Make Creamed Corn

In a saucepan over medium heat, melt the butter. Add the corn and cook for about 5 minutes. Stir in salt and pepper to taste. Remove from heat and set aside.

  4. 4

Cook Heirloom Tomatoes and Shishito Peppers

In a skillet, heat olive oil over medium heat. Add sliced heirloom tomatoes and cook until just soft, about 3 minutes. Add shishito peppers and sauté for another 2-3 minutes until they are blistered. Season with salt and pepper.

  5. 5

    Prepare Huitlacoche Bordelaise

In a saucepan, bring the beef stock to a simmer. Add huitlacoche and let it cook for about 5-7 minutes until heated through and flavors meld. Adjust seasoning if necessary.

  6. 6

    Serve

Plate the sliced NY Strip steak alongside the creamed corn, heirloom tomatoes, and shishito peppers. Drizzle the huitlacoche bordelaise over the steak.
