Prepare the Seeded Lavash
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, add water and olive oil, and mix until a dough forms. Knead on a floured surface for about 5 minutes. Roll out thinly and sprinkle sesame seeds on top. Cut into desired shapes.

Bake the Lavash
Preheat the oven to 350°F (175°C). Place the rolled-out lavash on a baking sheet and bake for 8-10 minutes until crispy and golden. Remove from the oven and let cool.

Arrange the Cheeses and Accompaniments
On a large serving platter, arrange the cheeses, honey, fig jam, olives, and nuts. Serve with the cooled seeded lavash.
