Prepare the Pig Ears
Clean the pig ears thoroughly under cold water. In a large pot, combine pig ears, salt, black pepper, and water. Bring to a boil, then reduce heat and simmer for about 2 hours until tender.

Fry the Pig Ears
Remove pig ears from the pot and let them cool slightly. Heat oil in a deep fryer or large pot over medium-high heat. Once hot, fry the pig ears in batches until they are crispy and golden brown. This should take about 5-7 minutes per batch.

Make Hibiscus Onions
Soak dried hibiscus flowers in boiling water for 15 minutes, then drain. Finely chop the red onion and mix with the soaked hibiscus flowers, lime juice, and a pinch of salt to taste. Let it marinate for at least 10 minutes.

Prepare Avocado
Slice the avocados in half, remove the pit, and scoop out the flesh. Cut into slices or cubes.

On a serving platter, arrange the crispy pig ears. Top with salsa bufalo, diced avocado, and hibiscus onions. Sprinkle cotija cheese generously over the top.
