    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to bloom.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, sugar, and salt. Heat over medium heat, stirring until the sugar is dissolved and the mixture is warm but not boiling.

    Combine Gelatin and Cream

    Remove the saucepan from heat. Add the bloomed gelatin and stir until fully dissolved. Stir in the buttermilk and vanilla extract until well combined.

    Pour and Chill

    Pour the mixture into individual serving glasses or molds. Cover and refrigerate for at least 4 hours, or until set.

    Serve with Toppings

    Once set, serve the panna cotta topped with yuzu berries and a sprinkle of togarashi nougatine and shiso leaves.
