Method
New York Steak
Bring steak to room temperature
Remove steaks from refrigerator 30-45 minutes before cooking and pat dry with paper towels. This ensures even cooking.
Sear steaks
Place steaks in the hot pan without crowding. Sear undisturbed 3-4 minutes on the first side until a deep brown crust forms.
Flip and baste
Flip steaks and add the unsalted butter, crushed garlic cloves and thyme sprigs to the pan. Tilt the pan slightly and use a spoon to baste the steaks with melted butter for 3-4 minutes for medium-rare (internal temp 125-130°F / 52-54°C). Adjust time for desired doneness: about 5-6 minutes for medium (135°F / 57°C).
Rest
Transfer steaks to a cutting board and loosely tent with foil. Rest for 7-10 minutes to allow juices to redistribute before slicing.
Slice and serve
Slice steaks against the grain into 1/4-inch slices and arrange on warmed plates. Spoon a generous amount of sesame sauce over or alongside the steak and sprinkle with a few extra toasted sesame seeds and sliced green onion if desired.
Famous Sesame Sauce
Combine ingredients
In a small bowl, whisk together soy sauce, toasted sesame oil, rice vinegar, honey, sesame paste (tahini), mirin, grated ginger, minced garlic and water until smooth and homogenous. The water helps thin the paste to a spoonable consistency.
Adjust seasoning
Taste the sauce and adjust: add a little more honey for sweetness, a splash more rice vinegar for brightness, or extra soy sauce for saltiness. If too thick, whisk in up to 1 additional tablespoon water.
Finish
Stir in toasted sesame seeds, sliced green onion and red pepper flakes. Let the sauce sit at room temperature 5-10 minutes to allow flavors to meld. Warm slightly if you prefer to serve warm with steak (heat gently in a small saucepan over low heat for 1-2 minutes, do not boil).
