Clean the Calamari

Rinse the fresh calamari under cold water. Remove the tentacles and cut the body into rings approximately 1 cm thick. Pat the calamari dry with paper towels.

Prepare the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Gradually whisk in the cold water until you have a smooth batter.

Heat the Oil

In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.

Fry the Calamari

Dip the calamari rings and tentacles into the batter, allowing excess batter to drip off. Carefully place them in the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Do not overcrowd the pan.

Drain and Serve

Using a slotted spoon, remove the fried calamari from the oil and drain on paper towels. Serve immediately with lemon wedges and garnish with fresh parsley.
