Preparation

For the Cauliflower

1. Prepare the Batter

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Mix well.

2. Make the Batter

Gradually add water to the flour mixture, whisking until smooth. The batter should be thick enough to coat the cauliflower.

3. Heat the Oil

Heat the vegetable oil in a deep frying pan over medium heat.

4. Fry the Cauliflower

Dip each cauliflower floret into the batter, ensuring it is fully coated, then carefully place it in the hot oil.

5. Drain the Cauliflower

Fry the cauliflower in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

For the Wrap

6. Toss Cauliflower with Molasses

In a large bowl, mix the fried cauliflower with pomegranate molasses until well coated.

7. Prepare the Wraps

Lay out the pita bread or wraps on a flat surface.

8. Assemble the Wraps

Spoon the coated cauliflower onto the center of each pita or wrap. Top with shredded cabbage, diced tomatoes, and chopped parsley.

9. Wrap It Up

Fold the sides of the pita or wrap over the filling and roll tightly.

For the Fries

10. Heat Oil for Fries

In a separate frying pan, heat the vegetable oil over medium-high heat.

11. Fry the Potatoes

Once the oil is hot, add the cut potatoes in batches and fry until golden and crispy, about 5-7 minutes.

12. Season the Fries

Remove the fries with a slotted spoon and drain on paper towels. Season with salt to taste.
